Two Fruity Picnic Food Recipes
Picnics are the perfect opportunities to have fun with your family, friends, co-workers, or anyone else you associate with, because they combine good conversation with great food. I have found that the best picnics have mouth-watering desserts that will catch your guests’ eyes. This article has two fruity picnic food recipes for desserts that add sweet, fruity flavor to your picnic and is guaranteed to please everyone at the table.
Picnic Food Recipes: Pineapple Casserole
This dish is a great dessert, but it can also complement a main course. The combination of the pineapple and the spices will definitely please the palate. To make, you just need the ingredients listed below:
- ½ cup of light brown sugar
- ½ cup of melted butter
- 6-8 slices of whole-wheat bread
- 1 teaspoon of cinnamon
- 1 teaspoon of ginger
- ½ teaspoon of nutmeg
- 5 cups of pineapple, chopped
- 1/3 cup of all-purpose flour
- Powdered sugar
Preheat the oven to 325 degrees Fahrenheit. Then, put your sugar, flour, pineapple, eggs, and spices into a bowl and mix. Take the bread and cut the bread into cubes, then set them aside for a second. Pour your batter into a baking dish (9 x 13), being careful to first butter the dish. In a separate bowl, pour the butter in and mix it with the bread. Pour this on top of the batter and bake the dish for approximately 60 minutes. When finished, sprinkle with powdered sugar if you wish.
Picnic Food Recipes: Classic Peach Cobbler
Ah, peach cobbler. This dish is an oldie but a goodie, and is liked by a wide range of people. The recipe below is a standard peach cobbler dish, because with this treat, it is best to leave it nice and simple. You will need:
- 4 cups of sliced peaches (Get them fresh instead of from a can)
- ½ cup of light brown sugar
- 1 1/3 cups of self-rising flour
- ½ teaspoon of cinnamon
- ½ cup of brown sugar
- 1 teaspoon of vanilla extract
- Dash of nutmeg
- 1 teaspoon of lemon juice
- Dash of salt
- ½ cup of butter
Preheat your oven to 425 degrees Fahrenheit. In a bowl, mix together 1 cup of flour, ½ cup of white sugar, brown sugar, nutmeg, salt, and cinnamon. You will want to use your fingers or a small blender to work the butter into the mixture, until you get something that resembles corn meal. At this point, toss in the remainder of the ingredients (1/2 cup of sugar, lemon juice, ½ cup of flour, and peaches) into a separate bowl and mix. Pour into a buttered 8 x 8 or 9 x 9 baking dish and top with the flour mixture you made at the beginning. Cover your dish and let it bake for about 10 minutes. Then, remove the cover and let it bake for an additional half-hour, or until the flour mixture is golden brown.

Low-Fat Picnic Food Ideas
Low-Fat Picnic Food Ideas
When you hear the word picnic, your mind probably conjures up visions of thick steaks, juicy hamburgers, and roasted hotdogs on a smoky grill, with plenty of side items to go with them. While this image looks and sounds absolutely delicious, it also sounds absolutely fattening. The truth is, a lot of people do not eat very healthy while on a picnic. If you are concerned about eating healthy, even on a picnic, then this article is for you. These low-fat picnic food ideas will show you that you can have a picnic and eat right at the same time.
Low-Fat Picnic Food Ideas: Grilled Lime Chicken
Chicken in and of itself is a lean meat, which means it does not have a lot of fat in it (especially when compared to beef). Grilling chicken helps with this even further because it burns away any excess fat and doesn’t involve fattening oils or other additions. This recipe for grilled lime chicken will give you a low-fat alternative for your picnic.
- Chicken breast
- 1 1/4 cup of lime juice
- A dash of salt
- Cracked black pepper
- Cilantro, minced
- 2 teaspoons of paprika
Take the lime juice, salt, paprika, and cracked black pepper and mix in a bowl. Remove approximately 1/3 of the liquid and set aside. Then, add 2/3 of the minced cilantro to the mix. Add the remaining 1/3 of cilantro to the 1/3 of liquid that you set aside. Let your chicken breasts marinate in this sauce in the refrigerator for at least three hours. Then, grill them as usual, making sure that the meat is tender, juicy, and pure white on the inside (no pink). Brush the mixture that you set aside on the chicken as you turn it over. This will keep your chicken from drying out on the inside. This dish has 3 grams of fat per your average-sized chicken breast.
Low-Fat Picnic Food Ideas:Strawberry Sorbet
If you want to cool off after some hot grilled chicken, then make yourself some strawberry sorbet. You will need:
- 2/3 cup of white sugar
- 2/3 cup of water
- 5-6 cups of fresh strawberries
- 1 3/4 tablespoons of lemon juice (or lime for a sweeter taste)
In a saucepan, dissolve the sugar into the water on low heat. Bring this mixture to a rolling boil. Then, remove and let cool. It will take 30-45 minutes. When it has cooled, set the container in the refrigerator. Then, hull your strawberries (take the stems off) and blend them. Take this strawberry mix and pour it through a sieve into a bowl. Then, add the lemon juice. Mix these two together, then let it chill for about an hour. Mix the strawberry mix and the water/sugar syrup together, pour into a baking pan, cover with plastic wrap and freeze for around 3-3 ½ hours. Remove; take off the plastic wrap, run the mix through a blender (to make a puree), then freeze again for another 3 hours. There are only 0.6 grams of fat in this dish.
